Tacos are my absolute favorite, and following a keto lifestyle makes it difficult at times to enjoy the hard taco shells, well these taco shells are amazing. Made totally from cheese, which in my opinion gives it a much better taste. I can have these tacos all day! This recipe is super, and you can top it off with a protein of choice. I went with ground beef this time around and used mozzarella cheese instead of cheddar. I made 4 servings from this recipe. You will need the following ingredients for the shells-
2 cup shredded mozzarella cheese
And for the filling you’ll need the following ingredients
1 pound ground beef
1 tbsp olive oil
1 tsp cumin
1 tsp paprika
1 tsp chili powder
1 tsp black pepper
Seasoning salt
1/4 tsp onion powder
Toppings – diced tomatoes, lettuce or cabbage, bell peppers, sour cream, and cheese
Preheat oven to 350 degrees an line a baking sheet with parchment paper
For each shell heap 1/4 cup of cheese on sheet, do not flatten, but do shape into a circle. Bake for 12 minutes.
While the shells are being baked, you can start making the filling, add oil to a skillet and add ground beef once the oil is heated. Cook for about 2-minutes- constantly stirring.
Add the cumin, paprika, chili powder, seasoning salt, black pepper and onion powder and stir until all ingredients are combined. You can also use the already prepped taco seasoning packets. Taste and add more dry ingredients as needed. Remove from heat.
Once the timer goes off on the cheese immediately remove from the oven and let it cool for a couple seconds. You will want to work quickly to ensure you get that taco shell shape.
You can use a taco holder like this to get the shape or just use a wooden spoon atop two cups to shape.
Leave to set for about 5 minutes and then remove and ad your filling and toppings of choice
