A ‘fakeaway’ take on classic fish and chips, full of protein.

Ingredients:
30g of breadcrumbs
140g of fresh cod
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp onion powder
30g of plain flour
1 egg
Salt and pepper
Method:
- Remove your cod from the fridge and portion into bites. Half an hour before cooking, pat your cod dry with kitchen paper and sprinkle with salt. This will draw out some of the moisture and ensure the cod is covered in the mixture evenly.
- Mix your breadcrumbs and your onion powder, garlic powder and paprika together, along with salt and pepper. Add to an oven dish and brown in the oven for 10 minutes.
- Separate your egg, flour and toasted breadcrumb mixture into three separate bowls.
- Using one hand for the ‘wet’ mixture (egg) and one hand for the ‘dry’ mixtures (the flour and the breadcrumbs), place your cod into the flour mixture. Next, using the other hand, add the cod to the egg mixture, and then transfer the cod to the breadcrumbs.
- Add the breaded cod bites to your airfryer, and cook for 10 minutes at 200°C.
- Turn your bites in the airfryer, and cook for another 5 minutes at 200°C.
- Serve with a squeeze of fresh lemon.
