This delicious, fresh Mediterranean Dip is filled with cucumbers, tomatoes, olives, feta cheese and more. It comes together in minutes and is also make ahead! Serve it with pita chips or as a side to grilled chicken or seafood.

Why We Love This Recipe

My sister first shared this salsa style dip recipe with me years ago and it has been a hit ever since! We had it at a family get together and we were seriously hooked on it right away. I always make a double batch when I’m serving it because it disappears so quickly!

I love that this salsa dip is filled with so many fresh vegetables which makes it a guilt-free appetizer and snack. The addition of feta cheese and black olives really takes this Mediterranean Dip to another level that will make you the hit of the party too.

Sometimes we like to serve it as a dip with pita chips but it also works great just as a side or topping to grilled or baked chicken or fish.

The extra bonus is that this Greek salsa is meant to be made ahead. You know I’m all about recipes that can be made ahead!

What Ingredients Are Needed To Make This Recipe?

In the summertime, we will often use tomatoes and cucumbers from our garden. But these can also be found year-round in the grocery store which makes Mediterranean salsa a great year round option. Game day option anyone?

When looking for black olives, be sure to look for the cans of sliced olives as you’ll save bit of extra time not having to slice them yourself. They’re readily available in the condiment aisle of the grocery store but I learned the hard way one time by grabbing whole olives that buying them already sliced can save extra time. No worries if not. I can just use the handheld food chopper (affiliate link) to chop up whole ones instead.

There are a couple of options when buying Feta cheese. You can usually find it in the specialty cheese section of the grocery store. At the stores I shop at, that is near the deli. It comes as a whole block or already crumbled (usually both options are available).

I like to buy the block feta cheese at a local specialty foods market in our area that sells other yummy Mediterranean foods because I can buy it in bulk. Did you know you can freeze Feta cheese? Yep! It totally works and you can use it in all kinds of other recipes including these Simple Mediterranean Quesadillas, Simple Greek Tacos or Greek Lentil and Orzo Salad.

The Greek herb blend can be found in the spices aisle of your grocery store.

How To Make This Salsa

Don’t be put off by all the chopping because it really does come together quickly. Sometimes, I like to use my handheld food chopper (affiliate link) to chop up the firmer vegetables like the cucumbers or onions. But of course, a chef’s knife will work too.

Simple add all the ingredients to a large bowl (1).

Then stir everything together to combine (2) and cover bowl with lid or foil. So that the flavors can blend really well, you’ll want to chill it for at least one hour but up to eight hours or even overnight.

Then serve it with pita chips (3) or in one of the other recipe suggestions I’ve provided above.

Make Ahead Preparation Tips

Is this salsa make ahead?

If you’re short on time and just want to do a bit of prep before assembling this Mediterranean dip, you can chop up the vegetables and store in the refrigerator until you’re ready to make the dip.

Can you freeze salsa?

Since this salsa dip is made with mostly fresh vegetables,  once prepared, it does not freeze well. So be sure to serve it within two days of preparing.

But as I mentioned above, you can freeze feta cheese. Make sure to package it in an airtight container and it will last for up to six months in the freezer. You can either freeze it whole and then break off what you need for a recipe or crumbled it then freeze. Or do a combination of both!

Ingredients

  • 2 cups cucumber peeled and chopped into small pieces (about 2 medium)
  • 2 cups tomatoes seeded and chopped into small pieces
  • 1 cup purple onion finely chopped
  • 4 ounces sliced black olives from a can and drained
  • 2 cloves garlic minced
  • 1 cup Feta cheese crumbled
  • 2 tablespoons olive oil
  • 2 teaspoons Greek herb blend find this in the spice aisle of the grocery store

Instructions

  • In a large bowl, combine all ingredients and stir to combine.
  • Cover and chill at least one hour so flavors can blend. Chill up to 8 hours before serving.
  • Serve with pita chips or toasted pita bread.
