This is my beautiful wifes recipe and the result will blow your mind. She is in India right now helping my parents with some medical issues and I took the instructions over the phone. We made the chhole bhature in less than 30 minutes and I kid you not, wow!!!! AMAZING! No restaurant ever makes chhole bhature this good.
For bhature, kneed the all purpose bleached flour (Maida) with plain yogurt, no water at all. Let it sit for ten minutes. Roll it little thicker than a chapati or tortilla and fry it in vegetable oil.
Now, the chhole. Boil two medium size onions, five garlic, eight to ten green chili, an inch of chopped ginger root in a pot or pressure cooker. In a pot, saut one thinly sliced red onion with a pinch of cumin. Drain the water from your boiled stuff and mix it and continue to saut for another five to ten minutes. Mix a half a pack of store bought chhole masala, couple pinches of salt.
If you keep Garam Masala at home, add a spoon of that as well. Mix the rinsed garbanzo beans (cooked can, medium size). Saut for another five minutes or so. Add a cup and a half hot water and cook for additional five minutes. Garnish with cilantro and lime juice and you are ready to serve this yummy, gourmet chhole bhature.
