Healthified 'Tortilla Trend’ Crunch Wrap

I’m back at it today with anther ‘tortilla trend’ idea! This one DOES actually use a tortilla this time and it’s a play on the infamous crunch wrap that you can get at Taco Bell, but… it’s made healthified! So, how does one make a crunch wrap better-for-you? Well, I swapped out the giant tortilla for a 100 calorie spinach and seed one, but really any 100 calorie flower-like tortilla will work here.

I also used vegetarian ground meat in mine, but mostly because that’s what I had on hand. Lean ground turkey will work here too. Other than that? I used my own seasonings and spices, and also a plain fat-free greek yogurt in place of the sour cream. Tada. Healthier crunch wrap!

This tasty crunch wrap was then turned into one of those new fangled tortilla trends by being set up and folded just so to make it all the more easy to heat and eat. These have to be one of my new favorites and it’s definitely going into the general rotation for Taco Tuesdays.

I served mine with a side of salsa and that’s was all. But, some beans or rice would be nice sides if you feel the need for that!

Healthified 'Tortilla Trend' Crunch Wrap

Ingredients

  • 1/2 Lb. Plant Based 'Ground Meat'
  • 1 1/2 Tsp. Salt-Free Taco Seasoning
  • 4 (100 Cal.) Tortillas
  • 1/4 C. Plain Fat Free Greek Yogurt
  • 1 C. Shredded Lettuce
  • 1/4 C. Pico
  • 1/2 C. Nacho Cheese Sauce
  • 8 Tortilla Chips
  • 1/2 C. Reduced Fat Shredded Cheddar Cheese

Instructions

  1. Cook the meat accordingly and season with the 1 1/2 Tsp. taco seasoning; set aside.
  2. Lay out the tortillas and cut each of them halfway through on one side.
  3. In one quarter of the tortilla, spread 1 Tbsp. greek yogurt.
  4. In the second quarter, add 2 Tbsp. of the lettuce and 1 Tbsp. pico.
  5. In the third quarter, spread 2 Tbsp. of the nacho cheese sauce, 1/4th of the cooked 'meat', and 2 Tortilla chips.
  6. In the final quarter, add 2 Tbsp. of the shredded cheese.
  7. Fold, fold, fold.
  8. Heat a small skillet over a medium heat and lightly coat the inside with a non-stick spray. Set the folded tortilla into the skillet and cook until browned on one side.
  9. Flip the folded tortilla over and cook to brown the other side.
  10. Once browned on both sides, remove from the skillet to transfer to a plate.
  11. Rinse and repeat with the remaining folded tortilla wraps.
  12. Serve right away with salsa if desired!
