How to make Venison Jerky Bites

Prep

Cut the venison up into small bite-sized pieces.

Mix together the marinade ingredients.

Marinate

Put the meat in the marinade and let it marinate in the fridge for at least 12 hours.

Preheat

Preheat the smoker to 170°F.

Smoke

Drain the meat from the marinade and pat dry. Place onto the grill (use a grill mat for the easiest time of it). Smoke for 3 1/2 hours at 170°.

Enjoy

Remove from the grill and let cool. Store in an airtight container in the fridge for up to a week.

Are there any substitutions for the Jarritos Mandarin soda?

Yup! You can use any kind of orange pop in this recipe. We prefer the flavor of the Mandarin the most, but get creative! We’ve made similar jerky with Dr. Pepper, Cherry Coke, and many other flavors of soda too. Make it your own!

Can you use beef for this recipe instead of venison?

Yes! You can totally use beef if you don’t have any venison handy. Use a lean cut of beef for best results. Stay clear of the chuck roasts and similar fatty/marbled cuts.

What if you don’t like any heat?

There is some mild heat to this recipe with the red pepper flakes and the sriracha. If you are super sensitive to heat you can reduce or skip these ingredients. It isn’t super spicy though, so I’d encourage you to give it a try!

Jarritos Mandarin Venison Jerky Bites

These tender, flavorful bites of jerky are made using fresh venison and a pop of Jarritos Mandarin soda.

Prep Time 10 minutes
Cook Time 3 hours 30 minutes
Marinating Time 12 hours
Total Time 15 hours 40 minutes

Ingredients

  • 3 pounds venison leg meat
  • 1 cup soy sauce
  • 1/3 cup brown sugar
  • 1/3 cup oil
  • 1 cup Jarritos Mandarin soda
  • 1 tablespoons red pepper flake
  • 3 tablespoons sriracha sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Cube the venison leg meat into bite-sized chunks.
  2. Combine all of the ingredients in a large container. Submerge the meat into the marinade and refrigerate for at least 12 hours.
  3. Preheat your smoker to 170°. Remove the meat from the marinade and pat dry.
  4. Place the jerky chunks either on a grill mat or directly on the grill grates. (The grill mat is more convenient, but not required.)
  5. Let the meat smoke for 3 1/2 hours at 170°F.
  6. Remove from the grill and let cool. Keep in the fridge in an airtight container for up to a week.
