I feel like I keep saying ‘it’s at that point in the year when I’m too busy to…’ when in reality… I’m just always too busy. I remember hearing once, that while parenting, things get easier in some ways but harder in others. And let me just tell you, that’s the truth. I don’t spend the same amount of time toting the little around from dance class or cheer practice, that’s true. I do spend more time checking in, going to appointments, and working on homework and bigger projects.

Either way, I don’t have any more time now than I did before. But, I still enjoy each and every moment I get with the kiddo. This morning? We’re getting off to an appointment so early that I will barely time for breakfast. Enter this Toaster Oven Egg-In-A-Hole!

This Toaster Oven Egg-In-A-Hole cooks up in just about 8 minutes and takes literally no hands on time. It’s simple. Quick. Easy. And you can pretty much eat it while you’re running out the door like I am today. I’ve made Egg-In-A-Hole before, but never in the toaster oven. I’m not sure why but using the toaster oven for smaller things almost makes it seem like it goes quicker. Maybe it’s the smaller amount of time that it takes to preheat.

You could definitely make this in the regular oven too, it just might take more time is all!

Toaster Oven Egg-In-A-Hole

Ingredients

  • 1 Slice Texas Toast
  • 1 Whole Large Egg
  • 1 Tbsp. Chopped Cooked Center Cut Bacon
  • 1 Green Onion, Sliced

Instructions

  1. Preheat the toaster oven to 400 degrees F. and lightly coat the sheet pan with non-stick spray.
  2. Use a 2-3" round cookie cutter to cut out the center of the bread.
  3. Crack an egg and gently set it into the cut out hole on the piece of bread.
  4. Cook for 8-10 minutes or until the egg whites are cooked through.
  5. Once done, remove from the oven and top with bacon and green onion to enjoy right away!
