Now that we’re settled in Bakersfield and Thanksgiving is behind us, it’s time to plan for fall and winter meals! And I’m visiting some old favorites!

This past week or so, we’ve had some really great meals. The Creamy Garlic Chicken Breasts were so good and garlicky with both of us agreeing, it was a def keeper! For dessert when the kids came out to visit us at Camp Pendleton, I made Easy One-Bowl Banana Cake and though everyone was full, they ate every last bite on their plates! So-good!
If you’re looking for a great breakfast, you’ll want to try Churro Waffles from Spruce Eats. Oh my, these tasted exactly like churros – one of my favorite treats when you go to the zoo or Disneyland. Yum!
This week I’m incorporating a couple of nights with soup on the menu in case dad’s over for dinner. But he should be able to eat the salmon too. I’m itching to try the fall dinner below for pork loin with apples and sweet potatoes!

Glazed Roast Pork with Apples, Sweet Potato & Sage
Dinner Rolls
This recipe caught my attention a couple of weeks ago and for rightful reason – it shouts fall! With spices, apple cider, apples, sweet potatoes and other ingredients, I just know this recipe will be a keeper and one to look forward to every fall!
(Tuesday)
Chicken Pot Pie Soup with Puff Pastry
Corn Muffins
This is such a great recipe and the soup is tasty, hot, and warms the soul! But more than that, the puff pastry just makes this soup even better! Oh-so-good!
(Wednesday)
Ginger Lime Salmon
Ann’s Rice Pilaf
Steamed Broccoli
With a smidgen of ginger lime balsamic left in the pantry makes this a perfect recipe to try once again from Hello Fresh – recipe courtesy of our friends in Huntington Beach! The last time I fixed it, was New Year’s Eve 2020. Why do I remember such things?
(Thursday)
Sloppy Joes
Creamy Coleslaw
Who can pass up sloppy joes? These sandwiches are just so tasty with a bit of sweet, a bit of heat and tang – oh my! Pile it on and serve open faced – just the way I like it!
Moqueca – Brazilian Fish Stew
Spanish Rice
This soup is so darn good! The first time we tried this soup, I was simply blown away by the great taste! It’s spicy, flavorful and with the addition of coconut milk, it has great flavors of South America!

Out for Dinner
I’ve been cooking up a storm for several weeks to include breakfasts and lunches. With the price of food and especially fast food, it’s just more economical to eat at home. But that can get tiring to say the least – so tonight it’s either going out to dinner or take home!

Jo Cooks is one of my favorite food bloggers! I love that some of my favorites have cookbooks available on Amazon. I’ve tried many of Jo’s recipes and they’re all so good! Yum! I need to add the Big Book of Jo’s Quick & Easy Meals to my wishlist!
