Gluten free lemon cookies: All you’ll need Butter, sugar, eggs, vanilla extract, gluten-free flour blend, baking soda, seat salt, cream of tarter, lemon juice and lemon zest come together to make these magical delights! Options: You can zest to taste! We love lemon zest so we go a little crazy with it sometimes. Key tips: Chill the dough for 30 minutes before baking. Make sure to allow the cookies to cool on a baking sheet before transferring.

Total Time: 20 min
Ingredients: 1 cup butter, softened 3/4 cup sugar 2 eggs 1 teaspoon vanilla extract 2 3/4 cups gluten-free flour blend 1 teaspoon baking soda 1/2 teaspoon sea salt 2 teaspoons cream of tarter 2 Tablespoons lemon juice zest from one lemon Directions: In a large mixing together beat butter for 30 seconds. Add sugar, vanilla extract, lemon juice and eggs. Mix together. Sift in flour, baking soda, salt, cream of tarter, zest of lemon. Fold in flour until fully combined. Chill dough in refrigerator for 30 minutes. Preheat oven to 400 degrees Spoon about 1 Tablespoon of dough onto un-greased baking sheet. Making around 24 cookies. Bake for 8-10 minutes. Allow cookies to fully cool at least 10 minutes on baking sheet before transferring. Zest with additional lemon and enjoy! Nutrition Information: Serving size: 1 cookie
